Marinated Olives with Herbs and Citrus

Ingredients:

  • 2 cups mixed olives, drained and pitted
  • 1/4 cup extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes
  • Zest of 1 lemon
  • Zest of 1 orange
  • Salt and pepper, to taste

Directions:

  1. In a medium bowl, combine the olives, extra-virgin olive oil, minced garlic, dried oregano, dried thyme, and red pepper flakes. Mix well to combine.
  2. Add the lemon zest, orange zest, and a pinch of salt and pepper to the olive mixture. Stir to combine.
  3. Cover the bowl with plastic wrap and let marinate in the refrigerator for at least 2 hours or overnight to allow the flavors to meld together.
