Spanish Tortilla with Potatoes and Onions

Ingredients:

  • 4 medium potatoes, peeled and thinly sliced
  • 1 medium onion, thinly sliced
  • 4 tablespoons extra-virgin olive oil
  • 6 large eggs
  • Salt and pepper, to taste

Directions:

  1. In a large skillet, heat the olive oil over medium heat. Add the sliced potatoes and onions and sauté for about 20 minutes until tender and golden brown.
  2. In a separate bowl, whisk together the eggs and season with salt and pepper.
  3. Pour the egg mixture over the potatoes and onions in the skillet. Cook over low heat for about 10-15 minutes until the eggs are set and the bottom is golden brown.
  4. Flip the tortilla onto a plate or cutting board and then slide it back into the skillet to cook the other side for another 5-10 minutes until golden brown.
  5. Once cooked, remove from the heat and let it cool for a few minutes before slicing into bite-sized pieces. Serve warm or at room temperature.
